I thought I’d share with you my simple #Kale salad.
You will need a big bunch of Kale ( I used 2), olive oil, salt & pepper to taste ( I use #Himalayan Pink salt), toasted almond flakes ( optional for decoration! plus tastes really good)
Drizzle whole kale leaves with olive oil, salt & pepper.
Spread into a single layer on a baking sheet (you might need 2). Bake in the oven for 8 mins or until the edges are crispy and the centers are wilted. Remove from oven, let cool to room temp. Stack the leaves and chop them, removing the more coarse parts of the stems. Set aside.
Meanwhile prepare dressing! You need 1Tbsp of lemon juice, 1Tbsp Olive oil, 1tsp honey, 1 crushed garlic, 2Tbsp Tahini, water to thin as needed. Mix well
Serve prepared Kale with the dressing, top with toasted almond flakes. It is so yum.
The photo was taken from my second helping last night so I ran out of almond flakes. I didn’t pour the dressing over the Kale, in stead, I kept it in the dipping bowl & ate with the chopsticks ( well, my Vietnamese origin habits;)! And yes, it went down well;)!
